This first recipe is quick, easy and tasty breakfast muffins. I hope you like them as much as my friends & family.
1- Medium Banana, mashed
1- 15 oz can sweet potatos mashed
1/4 cup 100% pure maple syrup
1 teaspoon Vanilla extract
2 cups whole oat flour
1/2 teaspoon baking soda
1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground Cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/2 cup of walnuts
1 cup fresh or frozen blueberries
1. Preheat oven to 375. In a large bowl combine and mix together first 4 indigents.
2. In a small bowl combine next 7 indigents.
3. Transfer the dry mixture to the wet mixture, don't over mix to avoid toughness.
4.Fold in nuts & blueberries.
5. Spoon batter into muffin pan with 12 cupcake liners.
Bake for 20 minutes
Cool for 5 minutes, Enjoy!
